Perfect match of minerality and fruitiness combined with a multi-faceted concentration
Great in combination with shellfish (e.g., clams). Add thyme and sauté plenty of vegetables such as fennel, celery, carrot, onion, and garlic, deglaze with a splash of white wine, and briefly boil the mussels. This wine is an absolute winner with fish dishes. Pan-fried salmon with crispy skin and wok vegetables or sole with beurre noisette, lemon, and parsley are just a few delicious examples.
